Colatura di alici is a prized condiment from the Mediterranean tradition, made by slowly curing anchovies in salt. During the curing process, the liquid released by the fish is collected and carefully filtered, resulting in a clear extract with an amber color and intense aroma.
Its flavor is bold, rich, and harmonious, with a natural saltiness that enhances dishes without overpowering the other ingredients. We are a family of fishermen for four generations, owners of the largest Italian tuna fleet in the Mediterranean. This heritage allows us to monitor the tuna from the moment it's caught and to hold the highest quota of Mediterranean tuna allocated by law.
Our in-depth knowledge of tuna begins at sea and continues on land, where every step is carefully monitored: from selecting the finest cuts to artisanal processing in our Salerno facility. Each product is handcrafted, following timescales and methods that respect the raw material and preserve its quality, consistency, and flavor.
